Dutch Apple Pancake

My sister Jennifer sent me this recipe and picture yesterday and it sounded so good, I just had to share it.  Instead of a Pancake House, she often jokes that she has a Pancake Apartment! From her reviews, it seems that this Dutch Apple Pancake is sure to be a new specialty at her Pancake Apartment!

 
Tips:
  • This recipe should serve 2-4 people depending on appetites and what, if any sides served with it.
  • For a thicker pancake, cut filling recipe in half and bake in a small skillet.
  • You can use any pancake mix or Bisquick style baking mix for this recipe.  Click HERE for a recipe to make your own Baking Mix.
  • For a homemade filling try doubling my recipe for Maple Fried Apples instead of the filling recipe below.

 

 
Dutch Apple Pancake

 
Filling
2 cans apple pie filling

 
2 tablespoons butter
1 teaspoon cinnamon
1/4 cup brown sugar

 
Pancake
1 cup pancake/baking mix
2/3 cup milk
2 tablespoon vegetable oil
1 egg

 
Preheat the oven to 350.
Melt butter, cinnamon, and brown sugar in a large skillet. Add pie filling and stir. Warm the filling for 5 minutes over medium low heat. Taste the filling and add more cinnamon or brown sugar to meet your tastes.

 
In a medium bowl combine pancake/baking mix, milk, oil and egg . Pour pancake mixtue on top of the filling in the skillet. Set skillet on a cookie sheet and place in oven. Bake at 350 for 20-25 minutes or until there is a golden brown crust on the pancake and the middle feels spongy.  Remove from the oven and sprinkle with powdered sugar or cinnamon sugar. Serve warm.

Mmmmmm....that brings back memories from childhood. My dad's side of the family is Pennsylvania Dutch and this was one of his Sunday morning specialties!
