After Thanksgiving-Creamed Turkey in Stuffing Casserole

I found this recipe at CDKitchen.com and it's a delicious way to use up leftover Thanksgiving turkey and dressing (stuffing). I made this last year and used 1 cup of evaporated milk and 1/2 a cup of leftover gravy and omitted 1/2 a tablespoon of flour, I also topped the dish with leftover mashed potatoes. If you do this you may need to add another 5-10 minutes to the cooking time.

Creamed Turkey in Stuffing Casserole

2 cups leftover stuffing
1/4 cup chopped onion
1/4 cup chopped celery
1 1/2 tablespoon butter
1 1/2 tablespoon flour
1 1/2 cup evaporated milk
1 1/2 cup cubed cooked turkey
1/8 teaspoon pepper
1/8 teaspoon thyme
1 dash poultry seasoning


Preheat oven to 350F. Press stuffing in bottom of a greased baking dish. Saute onion and celery in butter. Stir in flour until well mixed.

Gradually stir in evaporated milk over low heat until sauce thickens. Stir in remaining ingredients; mix well. Spoon on top of stuffing and bake for 25-30 minutes.
